Cider - mostly a northern drink because the fermentation needed to be between 40 and 60 degrees for 3 months.  15 to 20 proof.  But . . . Peach Cider.

Applejack (only in the north) -  ice fermentation -- i.e., let the Cider freeze and remove ice from the top, concentrating the alcohol.  60 to 80 proof.
